Fried prawns are made of prawns marinated in an aromatic spice mix, coated with egg wash and bread crumbs and fried to perfection. It is quick and easy to make fried prawns (jhinga) at home, as you will learn through my recipe.

The Ingredients:

To marinate the prawn:

I found this recipe from a fruit vendor’s mother, who came to help him on a busy festival morning. She had brought a little lunchbox for her son and was kind enough to offer me to taste it while I waited for my turn. It was delicious. I asked her for the recipe, and she explained it softly, her hands still sorting fruits.

I made it that night. My husband said it was “seasonal and soulful,” and the boys loved it. Now, it is our fruit-shopping treat. That day reminded me that even in the middle of rush and ruckus, love is quietly cooked and offered, especially by mothers to their children.

How to Make Fried Prawns? (Step by Step Guide with Images)

Step 1: In a mixing bowl, take 1 kilogram of prawn (washed, peeled, deveined, flesh only), 3 tbsp of ginger-garlic paste, 1 tbsp of salt, 2 tbsp of black pepper powder, 2 tbsp of red chili powder, 3 tbsp of refined wheat flour (maida), and 2 tbsp of lemon juice.

Step 2: Mix everything nicely. Cover the bowl and refrigerate for at least 3 hours.

Step 3: Now, to coat the prawn pieces, take 4 tbsp refined wheat flour in a flat bowl, crack 2 pieces of eggs in another and whisk them to make an egg wash, and 4 tbsp of bread crumbs in a third bowl. Arrange them as shown in the image below for your convenience.

Step 4: Take out the marinated prawns from the fridge after 3 hours. Put a piece in the bowl with maida and use a fork to coat it nicely from all sides.

Step 5: Then, transfer it to the bowl of egg wash and coat it nicely.

Step 6: Finally, transfer it to the bowl with bread crumbs.

Step 7: Ensure that it is coated properly from all sides as shown in the image below.

Step 8: Repeat the steps to coat all the prawn pieces and keep them all on a plate. Refrigerate it for another hour to set properly.

Step 9: After an hour, heat an adequate amount of cooking oil in a frying pan and put each of the coated prawn pieces carefully in the hot oil.

Step 10: Let them fry for a minute on one side and then flip each with the fork carefully not to break them in the process.

Notes

There is no need to double coat the prawns.
Adjust salt and red chili powder in the marination according to your preference.
I refrigerate the prawns twice. This allows for proper setting and crunchiness.
Do not fry the prawns for a long time on any side or else they will burn quickly and render a bitter taste.
