Andhra Fish Fry

Rohu fish coated in a fiery homemade masala, then pan-fried till golden and crisp — this Andhra fish fry is a go-to spicy starter.

Ingredients
  

To marinate the fish:

  • 5 pieces of Rohu fish or any variety
  • 1 tbsp ginger garlic paste
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • Salt as per taste
  • ½ tsp black pepper powder
  • ½ tsp garam masala powder
  • 1 tbsp lemon juice or white vinegar
  • ¼ tsp red food color optional
  • 1 tsp cooking oil

To shallow fry the fish:

  • 2 tbsp cooking oil or mustard oil

Instructions
 

  • Make a masala paste with 1 tbsp of ginger garlic paste, ½ tsp of turmeric powder, 1 tsp of coriander powder, 1 tsp of red chili powder, salt as per taste, ½ tsp of black pepper powder, ½ tsp of garam masala powder, 1 tbsp of lemon juice (or white vinegar) and ¼ tsp of red food color (optional). Then add 1 tsp of cooking oil. Mix again and keep aside.
  • Apply the masala paste on 5 pieces of Rohu fish. Cover and let it rest for half an hour. (Pro tip: Refrigerate the marinated fish for 2 to 3 hours for best results).
  • Fry the marinated fish pieces in 2 tbsp of cooking oil for 5 to 7 minutes on one side on a medium flame. Flip and repeat the process until it is done. (Pro tip: Don't rush to flip the fish while frying; let it release naturally, or it breaks apart).
  • Your spicy and crispy homemade Andhra fish fry is ready to serve.

Notes

Adding oil to the masala helps in applying and sticking the paste on the fish easily and makes it crispy after frying.
Let the masala paste rest for 5 minutes before applying it on the fish pieces. This helps infuse the flavor of the spice nicely.
I have shallow-fried the fish. You can deep-fry them if you want.
