Black pepper fish fry refers to shallow fried Rohu or any other fish pieces marinated in a mixture of ginger and garlic paste, lemon juice, chaat masala powder and a specially prepared ground masala. This masala comprises a lot of black peppercorns, red chilies, cumin seeds, cinnamon sticks, and salt. The marinated fish pieces are fried to perfection for a crispy exterior and a soft interior.
I have used Rohu fish in the recipe. You can take any fish variety.Do not use more cumin seeds than I mentioned for a kilo of fish. The dish will become bitter.Want the fish pieces to be tangier? Add more chaat masala powder and lemon juice to the marinade.A bit of Kashmiri red chili powder on top of the marinated fish pieces adds to the visual appeal. Do not use food color.I always fry fish in mustard oil for the rich taste. You can use any variety of cooking oil.
