Cabbage Vada

Crispy on the outside, soft and packed with flavor on the inside, this cabbage vada brings together dal and finely sliced cabbage for a snack that's a little different from the usual version, best enjoyed hot with chai or your favorite chutney.

Ingredients
  

To make the cabbage mixture:

  • 150 grams cabbage finely sliced
  • 1 cup chana dal soaked
  • ¼ cup tur dal soaked
  • 2 pieces green chilies
  • 3 pieces dry red chilies
  • 1 piece ginger 2 inch in size, peeled
  • 1 tsp cumin seeds
  • Curry leaves a handful, roughly chopped
  • Coriander leaves a handful, roughly chopped
  • Mint leaves a handful, roughly chopped
  • 1 tsp salt
  • ¼ tsp asafetida hing

To deep fry the cabbage vadas:

  • Cooking oil an adequate amount

Instructions
 

  • Wash and soak 1 cup of chana dal and ¼ cup of tur dal to swell up. Drain the water.
  • Cut 150 grams of cabbage into thin slices.
  • Grind 2 pieces of green chilies, 3 pieces of dry red chilies and a piece of ginger (2 inches in size) with 1 tsp of cumin seeds in a mixer.
  • Blend the soaked dal with it into a coarse paste. (Pro Tip: Do not add water while grinding the dal. It will make the vadas unnecessarily moist and soggy).
  • Transfer it to a mixing bowl and add a handful each of roughly chopped curry leaves, coriander leaves and mint leaves along with 1 tsp of salt and ¼ tsp of asafetida (hing). Mix nicely and add a few more soaked lentils.
  • Shape the vadas.
  • Deep fry them on a medium flame in adequate cooking oil. Remove when crisp and golden. (Pro tip: Do not flip the vadas immediately, or else it will break).
  • Your nice and crispy homemade cabbage vada is ready.

Notes

Adjust the number of chilies according to your heat tolerance.
I add whole soaked chana dal to the cabbage mix as it gives a lovely nutty feeling in every bite.
Always fry the vadas on a medium flame. This will prevent them from burning from the outside and remain uncooked from the inside.
