Take 8 bread slices and flatten each bread slice on both sides using a rolling pin. (Pro tip: Each cheese stick will need one bread slice to make. So, take as many bread slices as cheese sticks you want to make).
Cut the edges of each flattened bread slice. Repeat for all bread slices. Put them aside. (Pro tip: Do not throw the cut edges of the bread slices away. You can roast them a bit and grind them to make the bread crumbs needed to coat the cheese sticks if you do not want to use the store-bought variants).
Take the string cheese pieces on a plate. Put one piece of cheese string or cheese finger on one end. Roll it. (Pro tip: If you do not have cheese strings, you may use mozzarella or cheddar cheese as well. Cut them in the desired finger shape).
Apply water on the open end. Close it nicely.
Apply water on the ends and close them properly as well.
Repeat the steps for the other end and complete making the cheese stick. Keep them all aside on a plate.
Crack 1 egg in a bowl. Add 2 tbsp of milk and a pinch of salt.
Beat it nicely with a fork. Keep aside when done.
Take a sufficient amount of bread crumbs in another bowl. Add ½ tsp of mixed herbs. Mix it nicely. (This is however optional).
Coat each cheese stick with the egg wash nicely.
Put it in the bowl of bread crumbs. Use your hands to coat it nicely on all sides.
Keep it on a plate. Repeat the steps. Keep all on a plate. Refrigerate them for an hour. (Pro tip: Refrigerating the cheese sticks will allow the bread crumbs to set properly and not come off while frying).
Take enough cooking oil in a kadai. Heat on a high flame. Release each coated piece of cheese sticks carefully when the oil is hot. Fry for 2 minutes on a medium flame. Flip them gently. Cook for another 2 minutes or so. Remove when they are golden brown in color on all sides. (Pro tip: You may put them on a plate laid with a piece of tissue paper to absorb the excess oil).
Your delicious cheese sticks are ready. Lay them on a plate and serve hot with tomato ketchup or any green chutney.
