Cutting Chai

Cutting chai is made with tea leaves boiled in milk and water along with sugar, ginger and cardamom.

Ingredients
  

  • 2 tsp tea leaves powder
  • 1 cup water
  • ¾ cup milk
  • 3 pods cardamom Elaichi - crushed
  • 1 inch ginger - grated
  • 2 tsp sugar

Instructions
 

  • Heat 1 cup of water in a saucepan on a medium flame and add 3 pods of crushed cardamom (Elaichi) to it along with an inch of grated ginger. Let it come to a boil.
  • Then, add 2 tsp of tea leaves (powder) and give it a nice stir. Let it come to a boil. (Pro tip: I have used regular CTC chai here. You can use other variants as well).
  • Now, add 2 tsp of sugar to the boiling tea, stir and let it boil for 5 minutes on a medium to high flame. Now, reduce the flame and pour in ¾ cup of milk to the chai. Give it a nice stir and let it boil for 2 minutes. Stir the chai in between. Turn off the flame once it boils.
  • Filter the chai in a glass or a cup with a strainer. Your cutting chai is ready. Enjoy it hot with biscuits.

Notes

When you crush the cardamom pods, remove the seeds first and then crush them along with the skin.
I always use grated ginger and not ginger paste to make cutting chai. It gives the authentic flavor and taste.
If you want a stronger flavor in your cutting chai, boil the tea for a little longer.
Though I have used two teaspoons of sugar for making two glasses of cutting chai, you can increase or decrease the quantity as per your preference.
