Drumstick Pickle

Drumstick pickle comprises fresh drumsticks, fenugreek seeds, mustard seeds, tamarind, peanut oil, and a few spice powders, all mixed nicely.

Ingredients
  

  • 250 grams Drumsticks (cut into pieces)
  • 1 tbsp Fenugreek seeds
  • 1 tbsp Mustard seeds
  • 100 ml Peanut oil
  • 50 grams Red chili powder
  • 2 tbsp Salt
  • ½ tbsp Tamarind
  • 1 tbsp Turmeric powder

Instructions
 

  • At first sauté 1 tbsp fenugreek seeds & 1 tbsp mustard seeds for 8 mins till an aromatic smell comes out and the color changes to brown.
  • Add 100 ml peanut oil in a wok and heat it. Now add 250 grams drumsticks cut into long pieces into the oil. Fry it for 1 min.
  • Now turn off the flame and let it cool.
  • Now add 50 gm red chili powder and 2 tbsp salt into drumsticks.
  • Now add the grounded powder of sautéed 1 tbsp fenugreek seeds & 1 tbsp mustard seeds into the drumsticks.
  • Add 1 tbsp turmeric powder into the drumstick.
  • Mix it very well and leave it for 3 to 4 hours.
  • Drumstick pickle is ready and store it into a glass jar and whenever needed enjoy this delicacy.

Notes

I recommend using fresh drumsticks of top-quality to make this pickle. Clean thoroughly and cut them into long pieces. This ensures proper absorption of flavor and spices. This will also render the perfect texture of the pickle.
Take time while dry roasting the mustard and fenugreek seeds. Stir them continuously on a low flame to prevent burning and remove them when they release their natural rich aroma. This will enhance the taste of the pickle.
I recommend using peanut oil to make this pickle. Frying the drumsticks in peanut oil renders a unique nutty flavor to the pickle. Make sure that the oil is smoking hot before you add the drumsticks.
After frying the drumsticks, allow them to cool down completely before you add the rest of the ingredients to them. This will ensure that the spices stick to the surface of the drumstick pieces and enhance the taste.
You may adjust the amount of red chili powder and tamarind according to your taste preference. However, I suggest you start with the amount mentioned in my recipe and increase it gradually after tasting, if required.
