Egg fry masala is made with hard-boiled eggs, cut into halves and cooked in a spicy masala base comprising finely chopped onions and tomatoes along with green chillies, curry leaves, ginger-garlic paste and a variety of aromatic spices.
Fry 1 piece of green chili (broken in half) and a handful of roughly chopped curry leaves in 2 tbsp of cooking oil for about 10 seconds on a medium flame. Add 1 piece of onion (medium size, roughly chopped) and sauté until translucent.
Add ½ tsp of ginger and garlic paste. Sauté for a minute. Mix ½ tsp of salt, 1 tsp of red chili powder, ½ tsp of coriander powder and ¼ tsp of black pepper powder.
Add 2 pieces of finely chopped tomatoes. Cover and cook until soft.
Add ¼ cup of water. When dry, add 4 pieces of boiled eggs, cut into half.
Mix the masala, add ¼ cup of water, cover and cook for 5 minutes on a low flame. Transfer it to a plate.
Your tasty and spicy homemade egg fry masala is ready.
I have not fried the eggs. You can fry the eggs before you add them to the masala mix.You can take as many eggs as you need for the recipe but you have to adjust the other ingredients in that case.Always cook the dish on a medium to low flame or the masala will burn and the dish will have a bitter taste.
