Take a frying pan and heat it on a very low flame on your gas stove.
When it is hot, put 1 tsp of cumin seeds, 1.5 tsp of coriander seeds, and ½ tsp of carom seeds or ajwain to dry roast them.
Stir the spices continuously for about a minute or two until they are roasted properly without getting burnt and you can smell the flavor of the roasted spices.
Turn the flame of your gas stove off and leave it for some to cool completely.
Now take a mortar & pestle (haman dista). Make sure it is dry. You may also use your dry grinder at this point.
Pour the roasted spices into it.
Crush them gently.
Keep checking and grind the spices until you get a coarse powder.
When done, it is time to add a few ground spices to the powder.
Add ½ tsp table salt.
Add 1½ tsp chili flakes.
Add ½ tsp of red chilly powder.
Also add ½ tsp turmeric powder.
Add ½ tsp garam masala powder.
Add ½ tsp of chaat masala powder.
Finally, add ½ tsp garlic powder. You may use garlic paste if you do not have garlic powder but using its powder is better.
Mix the ingredients well. Your fish fry powder is ready to be used.
