Fried rice masala powder is a combination of ground spices such as cinnamon, cloves and green cardamom along with others such as star anise, mace, nutmeg and more.
Take a frying pan or wok and heat it on a low flame on your gas stove.
Put 1 tsp white peppercorns (shah marich), 1 small piece of star anise, 1 small mace (javitri) torn into small pieces, 2 small pieces of nutmeg (jaifal), 2 small sticks of cinnamon, 1 tbsp of green cardamom, and 1 tbsp of cloves into it.
Stir the ingredients continuously so that it does not get burnt during the dry roasting process.
Continue stirring until it changes to brown color and releases its magical flavor.
Transfer the spices to a bowl and keep them aside so that the spices cool off completely.
Selecting top-quality whole spices and dry-roasting them to perfection on a low flame is the key to make fried rice masala powder at home.
Keep a close eye on the change in color of the spices while roasting. Ensure that the spices are not burnt but turn brown evenly. Stir them continuously.
I would strongly recommend cooling the roasted whole spices before grinding as well as the ground powder before transferring it into a jar for storage.
I prefer a well-blended powder and grind the spices thoroughly. However, if you prefer a coarse texture, you are welcome.
Whenever you use the masala powder, ensure scooping the necessary amount with a dry spoon. This will prevent contamination due to moisture introduction.
