Garlic butter chicken bites comprise crispy fried chicken pieces tossed in a buttery garlic gravy with a tangy hint of lemon – ready in under half an hour and perfect as a starter or a quick side with your meal.
400gramschickenleg piece, boneless, cut into small pieces

To fry the marinated chicken pieces:
2tbspcooking oil
To cook the gravy for garlic butter chicken bites:
20gramsbutter
5piecesgarlicfinely chopped
2tspall-purpose flour
½cupwater
1tbsporegano
Black peppera pinch, crushed
Lemon juicehalf a lemon
½tspsalt
1tbspcoriander leavesfinely chopped
Instructions
Marinate 400 grams of chicken (leg piece, boneless, cut into small pieces) with a pinch of crushed black pepper and salt. Let it rest for 5 minutes.
Coat with 5 tablespoons of all-purpose flour.
Fry them in 2 tbsp cooking oil on a medium heat until golden brown. Remove them on a strainer and keep aside when done.
Fry 5 pieces of finely chopped garlic in 20 grams of butter on a medium heat for a minute. Mix 2 tsp of all-purpose flour and add ½ cup water after 30 seconds.
Add 1 tbsp of oregano and a pinch of crushed black pepper after a minute. Squeeze half a lemon and add ½ tsp of salt.
When the gravy thickens, add the fried chicken pieces. Mix well and then add 1 tbsp of finely chopped coriander leaves.
Cook for another 2 minutes until dry.

I have taken a boneless leg piece to make this dish. You can use chicken breasts as well.Be generous with the garlic to make this dish. Do not use garlic paste.Do not use too much water in this dish. It is meant to have thick gravy.I have used all-purpose flour in the recipe. You can replace it with corn flour if you want.Always let the chicken rest a few minutes after marinating so the salt and pepper flavors soak in properly.
