Goan Fried Chicken

Goan fried chicken is a spicy, sour, deep-fried chicken recipe, which is marinated in tamarind, ginger-garlic paste, and warm spices. The tamarind kick makes this recipe stand out from the rest of the fried chickenrecipes.

Ingredients
  

  • 500 grams chicken boneless, cut into medium pieces
  • Tamarind marble size, shredded
  • 3 tbsp water
  • Salt to taste
  • 1 tsp chicken masala powder
  • 1 tbsp ginger and garlic paste
  • ½ tbsp lemon juice or vinegar
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tbsp coriander powder
  • 1 tsp cumin powder
  • 2 tbsp gram flour besan
  • 1 tbsp corn flour or rice flour
  • ½ tsp garam masala powder
  • ¼ tsp red food color optional
  • 1 piece egg
  • Cooking oil adequate amount for deep frying

Instructions
 

  • Soak tamarind (marble size, shredded) in 3 tbsp of water for half an hour.
  • Marinate 500 grams of boneless chicken (cut into medium pieces) with salt to taste, 1 tsp of chicken masala powder, 1 tbsp of ginger and garlic paste, ½ tbsp of lemon juice, ¼ tsp of turmeric powder, ½ tsp of red chili powder, ½ tbsp of coriander powder, 1 tsp of cumin powder, 2 tbsp of gram flour (besan), 1 tbsp of corn flour, ½ tsp of garam masala powder, ¼ tsp of red food color (optional), and 1 piece of egg. Also add the soaked tamarind water.
  • Fry the marinated pieces in adequate cooking oil over a medium flame for about 10 to 15 minutes. Remove when done nice and crisp. (Pro tip: I fry on medium flame only because high heat browns the crust before the chicken cooks through.)
  • Your tasty and crispy homemade Goan fried chicken is ready. Garnish with a few finely chopped coriander leaves, sprinkle a bit of chicken masala powder and serve hot.

Notes

If you have extra time, marinating the chicken for 30 minutes before frying makes it even more flavorful. Just add 30 minutes to the total time if you do. I do this myself when I'm not in a rush.
I always use a heavy bottom kadai to deep fry the chicken in oil because it maintains the temperature of the oil well.
I do pat the chicken dry with a paper towel before marinating. It helps the spices stick to the chicken better.
