Using fresh ingredients is the key to making green chutney at home. The freshness adds to the vibrant color and authentic taste of the chutney.The number of green chilies is a matter of personal choice and taste preference. Therefore, if you want your chutney to be hot and spicy add more of them, otherwise, keep it low like I have.I have also used a few garlic cloves since I prefer it that way. However, you can add more of them if you want a strong garlic flavor in your chutney.Be careful while grinding the ingredients. If you need to add water, make sure you add it gradually. The ultimate consistency should be smooth and creamy and not too runny.While using the chutney, always use a dry and clean spoon to scoop it out from the container. This will prevent introduction of contaminants and moisture spoiling the chutney.
