Kadai Masala Powder

Kadai Masala Powder is a special mix of spices used in Indian cooking. It's made by roasting and grinding ingredients like coriander seeds, red chilies, cumin, and more.

Ingredients
  

  • 8 pieces Dry red chilies
  • 8 pieces Green cardamom
  • 2 tsp Coriander seeds
  • 1 tsp Black pepper
  • 1 tsp Cumin seeds
  • ½ tsp Fennel seeds
  • ½ tsp Fenugreek seeds

Instructions
 

  • Take a frying pan or wok and heat it on a low flame on your gas stove.
  • When it is quite hot, put 8 pieces of dry red chilies, 8 pods of green cardamom, 2 tsp of coriander seeds, 1 tsp of black pepper, 1 tsp cumin seeds, ½ tsp of fennel seeds, and ½ tsp of fenugreek seeds in the wok.
  • Stir the spices continuously for about 2 to 3 minutes to roast them nicely on a low flame.
  • When you smell the aroma of the roasted spices, turn off the gas stove. Transfer the spices to a plate. Let it sit for some time so that the spices cool off completely.
  • Now, take a dry and clean grinder.
  • Transfer the roasted spices to the grinder.
  • Grind them into a powder. Never mind if it is coarse.
  • Check the powder. If you want the texture to be a bit finer, grind it again.
  • Now, pour out the powder from the grinder to a plate and your kadai masala powder is ready for use.

Notes

  1. Use fresh spices to make kadai masala powder at home. Top-quality spices will render an authentic rich taste and flavor to the powder.
  2. My recipe is customizable. So, feel free to experiment with the quantities according to your taste preference. 
  3. Roast the spices nicely in a dry pan for the authentic flavor of the masala. Control the heat all through the process of roasting. This will preserve the natural flavor of the spices and prevent them from burning.
  4. The consistency of the kadai masala powder is a matter of personal choice. I prefer it a bit coarse. However, you can make a smooth powder if you like by grinding the spices a couple of times and straining and regrinding the husk every time.
