Lauki Soup (Bottle Gourd Soup)

Lauki soup is a healthy dish comprising bottle gourd, or lauki, as its base. This is boiled along with garlic cloves, onions, and fresh coriander stems. After this it is salted and peppered to taste, mixed with water, and slow-cooked to allow the flavors to blend.

Ingredients
  

To boil lauki:

  • 2 cups bottle gourd skin removed, cut into small pieces
  • 1 piece onion medium size, sliced finely
  • 4 cloves garlic peeled, whole
  • Coriander stems a few
  • 2 cups water

To cook the soup:

  • ½ tsp salt
  • ½ tsp black pepper powder
  • ½ cup water
  • 1 tbsp spring onion green part, finely chopped

For garnishing the lauki soup:

  • Spring onion finely chopped, as required
  • Black pepper crushed, as required

Instructions
 

  • Take 2 cups of bottle gourd (skin removed, cut into small pieces), 1 piece of onion (medium size, sliced finely), 4 garlic cloves (peeled, whole), a few coriander stems, and 2 cups of water in a pressure cooker. Cover the lid and cook up to 3 whistles.
  • Remove them carefully without the water to a mixie jar and make a fine paste.
  • Heat a skillet and pour the paste. Also, add ½ tsp each of salt and black pepper powder along with ½ cup of water. Mix well and cook for 5 minutes over a medium flame. Finally, add 1 tbsp of finely chopped pieces of only the green part of spring onions to it. Mix well.
  • The soup is ready. Transfer it to a soup bowl. Garnish it with a little bit of finely chopped spring onions and crushed black pepper as required and enjoy.
  • Your tasty and healthy lauki soup is ready. Serve it as is or with bread toast.

Notes

I have used the green part of spring onions only. This adds to the flavor without the pungent smell of onions.
Cook the soup over a medium flame. This will prevent overcooking and burning to spoil the nutritional value and the natural flavor of the soup.
Add crushed black pepper according to your taste preference.
