Take ½ cup of masoor dal (red lentil) in a bowl, wash nicely and keep it aside.
Now, take a kadai and put 2 tbsp of cooking oil in it on a medium flame. When the oil is hot, put 1 piece of onion (medium size, finely chopped) in it. Stir and fry it for a minute or two until the onions turn translucent.
Now, add 1 tbsp of garlic (4 to 5 cloves, finely chopped) and fry it for a couple of minutes as well until the garlic and onions become soft.
Now, add 1 tomato (medium size, diced roughly) to it. Stir and fry it until the tomato pieces become tender and starts secreting their juice, as shown in the image below.
At this point, add 1 piece of potato (medium size, diced roughly), 1 piece of carrot (medium size, diced roughly) and salt to taste. Mix them nicely, stir and cook for another couple of minutes.
Now, add the washed masoor dal to it. Mix it nicely with the other ingredients in the kadai.
Then, add 1.5 liters of hot water to it. Mix nicely, adding salt if necessary.
Cover the kadai and cook the soup on a low to medium flame for about 15 to 20 minutes.
After 20 minutes, remove the lid and check the doneness of the dal and vegetables.
Switch off the gas stove. Blend the soup with a hand blender.
Check the creaminess of the soup and continue blending more if needed.
Now, switch on the gas stove and crush about ½ a teaspoon of black pepper. Also, add a handful of finely chopped coriander leaves to it. Mix them nicely and cook for another couple of minutes to bring it to a boil.
Your homemade tasty and healthy masoor dal soup is eventually ready to enjoy. Serve it in a soup bowl and enjoy.
