Mutton Keema Samosa

Crispy spring roll sheets folded around a rich, spiced mutton mince filling and deep-fried until golden, these mutton keema samosas make a hearty, satisfying snack that's perfect for evenings, gatherings, or whenever you're craving something a little more indulgent than the usual potato samosa.

Ingredients
  

To prepare the mutton keema stuffing:

  • 500 grams mutton minced
  • 2 tbsp cooking oil
  • 4 tbsp ginger and garlic finely chopped
  • 1 tsp dry red chilies crushed
  • 1 tsp Kashmiri red chili powder
  • 1 tsp garam masala powder
  • 1 tsp coriander seeds crushed
  • 1 tsp salt
  • ¾ cup water
  • 2 pieces green chilies finely chopped
  • 2 pieces onions medium sized, finely chopped
  • 2 tbsp coriander leaves finely chopped

To assemble the mutton keema samosas:

  • Spring roll sheets as many as required
  • Maida paste as much as required

To deep fry the mutton keema samosas:

  • Cooking oil as much as required

Instructions
 

  • Fry 500 grams of minced mutton with 4 tbsp of finely chopped ginger and garlic in 2 of tbsp cooking oil over a high heat until it changes color and the moisture reduces to half.
  • Now add 1 tsp of crushed dry red chilies, 1 tsp of Kashmiri red chili powder, 1 tsp of garam masala powder, 1 tsp of crushed coriander seeds, and 1 tsp of salt. Fry until dry.
  • Mix ¾ cup of water, cover and cook for 20 minutes. Remove cover, stir continuously to cook on a high flame until dry.
  • First mix 2 pieces of finely chopped green chilies, then 2 pieces of finely chopped medium-sized onions, and finally 2 tbsp of finely chopped coriander leaves when the onions turn soft.
  • Transfer the samosa filling onto a plate, spread and let it cool down.
  • Make a thick maida paste with 2 tbsp of maida and 1 tbsp water and keep it aside. Take one spring roll sheet, make one fold outside and one on the inside to make a shape of a cone.
  • Fill the cone with keema stuffing, brush a little maida paste on the remaining part of the spring roll sheet, and fold it twice.
  • Insert the additional part of the spring roll sheet inside and press nicely to complete the samosa. Make all the samosas and keep them aside on a plate.
  • Flip and fry the mutton keema samosas in adequate oil until golden on both sides. Remove when done.
  • Your tasty and spicy homemade mutton keema samosas are ready.

Notes

The quality of the meat and keema changes the taste and the way the samosas hold their shape. I always make sure the meat is minced even and fine.
I used spring roll sheets; you can of course pick a traditional samosa cover made from maida if you want. It works well too.
Adjust the chili flakes along with green chilies based on your preference, more heat or mild.
Ensure the mutton keema stuffing stays dry and cool while you are filling; otherwise, any moisture will mess with proper frying, and that can make the samosas go soggy.
