Take 250 grams of paneer and grate it finely. Keep the plate aside. (Pro tip: If you are using homemade paneer to make this kheer, ensure that you wash it nicely with water after grating. This will remove the natural sourness of paneer which might curdle the kheer).
Now, take a pan, heat it and then pour a liter of full-cream milk into it. Let it boil for about 8 to 10 minutes on a high flame to become thick. (Pro tip: Stir the milk continuously to prevent it from sticking to the bottom or overflowing when it boils and lose all its cream).
When the milk becomes slightly thick, turn the flame of the gas stove to medium and put in the grated paneer. Mix it nicely. Let it cook for another 8 to 10 minutes until it boils again.
Now, to the hot paneer and milk mixture, add about 10 strands of saffron or kesar, mixed in warm milk. Mix it nicely with the kheer. Stir occasionally and cook it for another 5 to 6 minutes until the milk starts boiling again.
Now, add 5 tbsp of sugar to the kheer. Mix it nicely.
Then, add 3 tbsp of roughly chopped dry fruits to the kheer. Give it a nice mix and let the kheer simmer for 5 minutes. (Pro tip: You can use any type of dry fruits to the kheer such as almonds, cashew nuts, and pistachios).
Now, add ½ tsp of green cardamom powder to it and mix it nicely with the kheer. Cook it for another couple of minutes. (Pro tip: Do not make the kheer too thick at this stage, because it will become too thick unnecessarily after putting it in the fridge).
Check the texture of your paneer kheer. It should be a bit runny. Remove it on a serving bowl and keep it in the fridge for about an hour or so before serving.
Take out the bowl from the fridge after an hour. Your tasty and healthy homemade paneer kheer is now ready to enjoy. Garnish it with a few strands of saffron, chopped pieces of cashew nuts, almonds, and pistachios before serving.
