Ingredients

  • 200 grams paneer cottage cheese, cut in cubes
  • ½ cup curd 125 ml
  • ½ tsp black pepper powder
  • ½ tsp garam masala powder
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp turmeric powder
  • ½ tsp chaat masala
  • 1 tsp Kashmiri chili powder
  • 3 tsp besan gram flour
  • 1 tbsp kasuri methi dry fenugreek leaves
  • Salt to taste
  • 2 tsp mustard oil
  • Green capsicum a few cubes
  • Red capsicum a few cubes
  • 1 tbsp cooking oil for brushing the frying pan
  • Skewers as needed

Instructions

  • Take ½ cup (125 ml) of curd in a clean mixing bowl.
  • Add ½ tsp of black pepper powder, ½ tsp of garam masala powder, ½ tsp of cumin powder, ½ tsp of coriander powder, ½ tsp of turmeric powder, and 1 tsp of Kashmiri chili powder to it.
  • Follow it with 3 tsp of besan (gram flour), ½ tsp of chaat masala, salt to taste, 1 tbsp of kasuri methi (dry fenugreek leaves), and 2 tsp of mustard oil.
  • Mix everything nicely.
  • Add 200 grams of paneer or cottage cheese (cut in cubes).
  • Mix them nicely.
  • Then add a few cubes of green and red capsicum to it. (Pro tip: You can also add cubes of onions if you want. I am not using it as I am making completely veg paneer tikka).
  • Mix all of them nicely as well. Keep the bowl in the fridge for 30 minutes to set properly.
  • After half an hour, take the bowl out of the fridge. Insert a capsicum cube, a couple of paneer cubes, then a capsicum and two paneer cubes again, and lastly another capsicum cube in a skewer.
  • Now heat a grilling pan and put 1 tbsp of cooking oil. Brush it nicely all over the surface. (Pro tip: If you do not have a grilling pan at home, you can use a regular tawa and follow the same process).
  • Place the skewers one by one on the frying pan.
  • Flip them frequently and fry nicely from all sides for about 5 minutes on a medium to low flame.
  • Your homemade delicious paneer tikka is now ready to serve.

Notes

I usually use homemade thick curd to make paneer tikka.
Adding Kashmiri red chili powder gives a nice reddish color to the paneer tikkas.
I have dry roasted the besan a bit before adding. You can use satoo as an alternative as well.
Always use mustard oil for mixing the ingredients. This will render a nice pungent taste and flavor to the paneer tikkas.
If you are using wooden skewers, make sure you soak them in water for at least 10 minutes before using.
