Take 500 gm of potatoes, wash them thoroughly, and then boil them with 3 whistles. Peel off the potatoes and set them aside.
Now cut the large potatoes into 4 halves and the small potatoes into 2 halves.
Add 1 tbsp of mustard seeds powder, 1/4th tbsp of coriander powder, 1/4th tbsp of turmeric powder, ½ tbsp of red chili powder, 1/4th tbsp of carom seeds, 1/4th tbsp of mango powder, ½ tbsp of salt, and ½ cup of mustard oil. Mix everything very nicely.
I always choose firm and waxy potatoes to make this pickle. It gives a nice texture without making it mushy.Cut potatoes into uniform pieces before boiling if they are big in size. This will ensure even boiling and give a consistent texture to the pickle.Adjust red chili powder and other spices according to your taste preferences.I toast the powdered spices slightly before adding. This gives a nice flavor to my pickle.Allow the pickle to marinate for at least a day before serving. This will ensure proper blending of flavor and offer a strong taste.
