Star fruit chutney is made from fresh star fruit and is combined with fresh green chilies and garlic in mustard oil to make the sour chutney and jaggery if you want to make a sweet chutney.
Take a grinder and put 2 pieces of fresh star fruits, cut into small pieces, along with 1 whole bulb of garlic (deskinned), and 2 pieces of fresh green chilies (broken in half) into it and grind them into a fine paste. (Pro tip: You can add more green chilies if you want your chutney to be spicier).
Transfer the paste to a bowl.
Now, add 1 tsp of salt to it, followed by a tablespoon of mustard oil.
Mix it nicely, garnish it with a piece of star fruit, and your star fruit sour chutney is ready to be served with a variety of dishes and snack items.
To Make the Star Fruit Sweet Chutney:
Take a grinder and put 2 pieces of fresh star fruits, cut into small pieces, and grind them into a fine paste. Transfer the paste to a bowl.
Now, take a frying pan and heat it on a low flame on your gas stove. When it heats up, transfer the star fruit paste to it. When it comes to a boil, add ½ tsp of salt and 1 cup of jaggery. (Pro tip: The amount of jaggery should be equal to the volume of star fruit paste. You can make this with sugar only but using jaggery will add to the eventual taste and flavor of the star fruit sweet chutney).
Use a spatula to mash and mix the jaggery nicely with the star fruit paste.
Let the chutney cook on a low to medium flame for about 6 to 7 minutes until the jaggery melts completely and the color of the chutney changes to dark brown. Check the consistency and cook it for a couple of minutes more if you want it to be thicker or add a little bit of water and cook it for about a minute if you want it to be runny.
When you are happy with the consistency, turn the flame off, let the chutney sit for a while to cool down, and transfer it to a bowl and put a piece of star fruit to garnish it. Your star fruit sweet chutney is finally ready to be consumed with a variety of items.
To make the star fruit sour chutney, I will recommend using fresh and unripe star fruits for the right sourness and added flavor.You may add more or less green chilies than I have in the sour chutney according to your heat tolerance.To make the sweet chutney select fresh ripe fruits for the natural sweetness.If the star fruits are very sweet, add less jaggery to the chutney.You may add honey as well to the sweet chutney. This will complement the natural sugar in the star fruits without overpowering.
