It is crucial to choose fresh and firm fish to make this dish. The fish should have clear eyes and a clean smell. It will augment the taste and texture of the dish and enhance its flavor. It is best to marinate the fish and keep it aside for a little while. This will help the flavors to penetrate the fish and enhance its taste. Use tamarind pulp in the right proportion depending on the number of fish because adding too much of it will overpower the taste of the fish. Always start with a small amount of tamarind pulp and increase it gradually according to your taste preference. Also use fresh spices and grind them at home. This will add to the taste. Soak the mustard seeds before making a paste. Adjust the qualities according to your taste preferences.I cook the dish on a low flame so that taste of the tamarind and the fish blends properly. Do not overcook the fish to make it mushy. Give the dish a short time to rest before serving to get a unique gastronomic experience.
