Vegetable Paratha

Vegetable paratha typically has a vegetable stuffing comprising potatoes, capsicum, cabbage, carrot and more. These are fried in oil nicely on both sides.

Ingredients
  

  • cup refined wheat flour maida
  • 1 tbsp cooking oil
  • ½ tsp salt
  • 140 ml water
  • Coriander leaves a few, finely chopped
  • 2 pieces potatoes medium size, boiled, mashed
  • 1 tbsp capsicum finely chopped
  • 1 tbsp long bean finely chopped
  • 2 tbsp cabbage finely chopped
  • 2 tbsp carrot finely chopped
  • ½ tsp salt
  • ½ tsp coriander powder
  • ½ tsp red chili powder
  • ½ tsp chaat masala
  • 2 tsp cooking oil

Instructions
 

  • In a mixing bowl, take 1½ cup of refined wheat flour (maida) and add 1 tbsp of cooking oil and ½ tsp of salt to it.
  • Mix everything very nicely.
  • Now, add 140 ml water.
  • Make a dough.
  • Take some dough. Roll it to make a paratha.
  • Put some chopped coriander leaves on it.
  • Roll it again. Keep it aside.
  • In a separate bowl, take 2 pieces potatoes (medium size, boiled, mashed) and add 1 tbsp of capsicum (finely chopped), 1 tbsp of long bean (finely chopped), 2 tbsp of cabbage (finely chopped), 2 tbsp of carrot (finely chopped), ½ tsp of salt, ½ tsp of coriander powder, ½ tsp of red chili powder, and ½ tsp of chaat masala to it.
  • Mix everything nicely.
  • Now, take a bit of the vegetable mixture, put it on the paratha and spread it.
  • Fold the paratha.
  • Sprinkle a bit of flour on it.
  • Roll it again in a square shape.
  • Heat a frying pan or tawa. Fry the paratha on a medium flame.
  • Flip.
  • Fry the other side. Flip it a couple of times to fry nicely.
  • Now, put and spread 2 tsp of cooking oil on the paratha. Flip and fry both sides nicely.
  • Remove when done. Your tasty homemade vegetable paratha is ready to serve.

Notes

I mix the ingredients with the flour nicely so that there are no lumps.
You can use different vegetables of your choice to make the paratha.
Ensure the dough is soft.
I have given a square shape to the paratha. You can give a circular shape.
Do not put oil initially while frying the paratha.
