Ginger tea or Adrak Chai is a wonderful blend of tea leaves, a little water, milk, sugar and mainly a piece of ginger (Adrak). Cooking all these ingredients in different stages enhances the taste and aroma of the tea.
Take a saucepan and boil ¼ cup of water. When it starts boiling, add 2 tsp of sugar and 1.5 tsp of tea leaves. Mix everything nicely and let it come to a boil once.
At this stage, add a piece of fresh, washed and peeled ginger (adrak) to it.
Let it come to a boil and release its flavor in the water for 2 to 3 minutes.
Now, pour in 1 cup of milk into the saucepan. Stir it with a spoon or shake the entire pan in circular motion to let the milk cook on a high flame. Let it come to a boil once.
Now, reduce the flame of the gas stove and simmer the tea on a low flame so that it comes to a rolling boil. Regulate the flame so that it boils for 6 to 7 minutes and comes to a rolling boil for at least 3 to 4 times. (Pro tip: Boiling the tea on a low flame for a couple of times is crucial to mix the flavors of all the ingredients nicely).
Now, switch off the gas stove, strain the tea in a glass or a cup.
Your super tasty homemade Adrak chai is ready. Serve it hot with toast biscuits or any biscuits of your choice.
I have used local CTC tea leaves in the recipe. If you are using premium quality tea, take a bit more of tea leaves to make Adrak chai.Simmer your tea; do not rush the process. This will allow time to the ginger to infuse properly.For extra Kadak chai, add a splash of milk only after the color develops. Also, adding cardamom enhances the flavor of the tea, however, it is optional.I always use freshly crushed ginger, not paste to make Adrak chai. It gives the authentic taste.Do not add milk, tea leaves, sugar, and ginger all together to make your tea. It will not give the authentic taste.
