Anda ghotala is a popular and flavorful Indian egg dish that combines soft, spiced egg bhurji with a perfectly cooked sunny-side-up egg and aromatic green garlic butter. The dish uses boiled and grated eggs, which are cooked with onions, green chilies, and tomatoes, while the mixture of spices, including turmeric, red chili powder, and garam masala, creates a rich, savory base.

Ingredients
  

To make boiled egg bhurji masala:

  • 2 pieces eggs boiled, peeled, grated
  • 2 tbsp cooking oil
  • 1 tsp cumin seeds
  • 2 pieces onions medium size, finely chopped
  • 2 pieces green chilies finely chopped
  • 1 tsp cooking oil
  • 1 tbsp garlic paste
  • 1 piece tomato finely chopped
  • Salt to taste
  • 1 tsp garam masala
  • ¼ tsp turmeric powder
  • 1.5 tsp red chili powder
  • ½ cup water

To make sunny side up egg:

  • 1 tsp cooking oil
  • 1 egg
  • Salt to taste
  • Black pepper crushed, a pinch

To make garlic butter:

  • 1 tbsp butter
  • 15 stalks green garlic finely chopped

Instructions
 

  • Let 1 tsp of cumin seeds crackle in 2 tbsp of hot cooking oil. Then put 2 pieces of medium-sized onions and 2 pieces of green chilies, both finely chopped. Make a space in the middle when the onions are soft and translucent. Add 1 tsp of cooking oil again and 1 tbsp of garlic paste to cook it first on a high flame and then mix when the raw smell is gone.
  • Add 1 piece tomato (finely chopped) and salt to taste. Mash with a potato masher when soft.
  • Add and mix 1 tsp of garam masala, ¼ tsp of turmeric powder and 1.5 tsp of red chili powder.
  • Add, mix, and mash 2 eggs (boiled, peeled, grated) and ½ cup of water. Transfer it to a serving plate when done.
  • Make the sunny side up egg using 1 egg, 1 tsp of cooking oil, crushed black pepper and salt to taste. Keep it aside.
  • Fry 15 stalks of finely chopped green garlic in 1 tbsp of butter.
  • Put a bit of the fried green garlic on the cooked egg bhurji. Place the sunny side up egg.
  • Add the remaining green garlic. Your tasty and spicy homemade anda ghotala is ready.

Notes

This recipe uses a lot of oil traditionally.
I have used two onions, but you can use one.
If you do not get green garlic, you can use finely chopped garlic in its place as a substitute.
