The Ingredients:

To make boiled egg bhurji masala:

  • 1 tsp cooking oil

  • Salt to taste
  • 1 tsp garam masala
  • ¼ tsp turmeric powder
  • 1.5 tsp red chili powder
  • ½ cup water

To make a sunny-side-up egg:

  • 1 tsp cooking oil
  • 1 egg
  • Salt to taste
  • Black pepper (crushed, a pinch)

To make garlic butter:

  • 1 tbsp butter
  • 15 stalks green garlic (finely chopped)

I learned this unique recipe from my friend with whom I was having a casual chat a couple of weeks back. I recorded our conversation and later wrote down the steps in my notebook so that I could refer to the recipe anytime I want. The recipe seemed simple, as the steps looked very easy to follow.

I prepared it on a weekend, and the result of my efforts was just the right thing. My husband and two sons not only complimented my cooking but also asked for more. Seeing them enjoy my food made me extremely happy. The recipe I found has made me realize that I am a lucky person who, in addition to providing food, is also making happy family moments.

How to Make Anda Ghotala? (Step by Step Guide with Images)

Step 1: Let 1 tsp of cumin seeds crackle in 2 tbsp of hot cooking oil. Then put 2 pieces of medium-sized onions and 2 pieces of green chilies, both finely chopped. Make a space in the middle when the onions are soft and translucent. Add 1 tsp of cooking oil again and 1 tbsp of garlic paste to cook it first on a high flame and then mix when the raw smell is gone.

Step 2: Add 1 piece of tomato (finely chopped) and salt to taste. Mash with a potato masher when soft.

Step 3: Add and mix 1 tsp of garam masala, ¼ tsp of turmeric powder, and 1.5 tsp of red chili powder.

Step 4: Add, mix, and mash 2 eggs (boiled, peeled, and grated) and ½ cup of water. Transfer it to a serving plate when done.

Step 5: Make the sunny-side-up egg using 1 egg, 1 tsp of cooking oil, crushed black pepper, and salt to taste. Keep it aside.

Step 6: Fry 15 stalks of finely chopped green garlic in 1 tbsp of butter.

Step 7: Put a bit of the fried green garlic on the cooked egg bhurji. Place the sunny-side-up egg.

Step 8: Add the remaining green garlic. Your tasty and spicy homemade anda ghotala is ready.

Ingredients

Notes

This recipe uses a lot of oil traditionally.
I have used two onions, but you can use one.
If you do not get green garlic, you can use finely chopped garlic in its place as a substitute.
