Who’s Behind This Site?

I’m Mita Mondal, and Mitar Cooking is where I share the recipes I actually cook at home, a mix of everyday Bengali and Indian dishes, along with things I’ve picked up and adapted over years of cooking for my own family. I don’t have a culinary degree, and I’m not claiming to be a professional chef. What I do have is a home kitchen I cook in nearly every day, and a habit of not posting anything until I know it works.

How I Test Recipes?

Every recipe here goes through several rounds of cooking before it’s published. I usually make a dish once to get the basic version down, then cook it again, sometimes a few more times to check quantities, timing, and whether the instructions actually make sense to someone who isn’t me. If a step confuses me on a second read, I rewrite it before it goes up. I cook everything in my own kitchen, with the same kind of stove, pans, and ingredients most home cooks would have access to, rather than a professional test kitchen setup.

Ingredients and Photography

I use real, fresh ingredients, and I don’t substitute or fudge amounts to make a recipe look better on paper than it works in practice. The step-by-step photos on this site are taken while I’m actually cooking that dish and not pulled from stock libraries.

On AI

I don’t use AI to write recipes or generate cooking instructions. Every method, measurement, and tip comes from my own testing. If I ever use any AI tool for something unrelated to recipe content like resizing an image, for instance that has no bearing on the accuracy of the recipe itself, and I’ll always be upfront about it if asked.

Corrections and Updates

Recipes on this site aren’t static. When readers leave comments pointing out something unclear or tell me a substitution worked better than what I wrote, I go back and update the post. Significant changes are usually noted at the top of the recipe. If you try something here and it doesn’t turn out right, please reach out through my Contact Page. I read every message, and I’d rather fix a recipe than leave it wrong.

Independence

The recipes I publish aren’t paid placements. If a post includes affiliate links or sponsored content, it will be clearly marked as such, and it won’t change how I test or write about a dish.
