1. Arrange the sliced onions on a plate. Sprinkle 1 tbsp of salt over them and mix thoroughly. Next, incorporate the chopped green chilis and continue mixing.

2. Proceed to add the eggs, but first, separate the yolks from the whites. Set the yolks aside and combine the whites with the existing ingredients. Drizzle in mustard oil and gently blend it with the mixture.

Notes

Be careful of the spices you are using to make this dish because the eventual flavor largely depends on them.
For best results and an enhanced flavor, dry-roast all the spices and garlic first and then grind them, preferably in traditional a mortar and pestle instead of a mixer cum grinder.
Check the heat level of the dish and alter the number of fresh green chilies and amount of red chili powder depending on your tolerance level.
I make sure to leave some chunks of eggs while mashing. This will add to the texture of the dish. Do not make a smooth paste of them in a mixer grinder. Use your hands.
You may even add a few roasted vegetables like colorful bell peppers and tomatoes for an improved dimension and color to the texture and look of the dish and freshly chopped herbs for a touch of freshness.
