The Ingredients:

  • 2 tbsp cooking oil

To make the sauce:

  • 4 tbsp mayonnaise
  • 1 tbsp pickled cucumber (finely chopped)
  • 1 tbsp lemon juice
  • ½ tsp dried parsley
  • 1 tbsp coriander leaves (finely chopped)

To assemble the fish burger:

  • 1 piece lettuce leaf (large)
  • 3 slices tomato

This one came from a boatman in Kerala who made it on his houseboat using a tiny portable stove. It was fragrant with something I couldn’t name, which made it significantly different from the mutton burgers I usually have in the streets of Kolkata.

When asked, he said, “It is the water. Always cook it near water.” At home, I tried to recreate the feel with a pot of water nearby and open windows. It worked better than expected. Now I make it near a balcony on rainy days.

How to Make Fish Burger? (Step by Step Guide with Images)

Step 1: In a bowl, take 1 tsp of paprika powder, ½ tsp of black pepper powder, ½ tsp of regular table salt, 1 tsp of garlic powder, and a pinch of turmeric powder. Mix.

Step 2: Take 4 pieces of boneless fish (Bhetki) fillets and spread this mixture of spices on both sides generously to marinate it nicely. Keep it aside to set properly for about half an hour.

Step 3: In another bowl, take enough bread crumbs. Put 1 tsp of paprika powder and mix nicely. Keep aside.

Step 4: In another bowl, take ½ cup of maize flour (makai ka atta), ½ tsp of salt, and ½ tsp of black pepper powder. Mix and keep aside.

Step 5: In a different bowl, crack two pieces of eggs, add 2 to 3 tbsp of water to it, and whisk nicely. Keep aside.

Step 6: In another bowl, take half a cup of refined wheat flour (maida).

Step 7: First, coat the marinated fish fillet with maida.

Step 8: Then coat with whisked egg.

Step 11: Finally coat it with bread crumbs.

Step 12: Coat all the fish fillets in the same process.

Step 13: Heat 2 tbsp cooking oil. Deep fry the coated fish fillets.

Step 14: Remove when golden brown. Keep it on a plate laid with a piece of tissue paper to absorb the excess oil. Fry others in the same way.

Step 15: Make the sauce in another bowl with 4 tbsp of mayonnaise, 1 tbsp of finely chopped pickled cucumber, 1 tbsp of fresh lemon juice, ½ tsp of dried parsley, and 1 tbsp of finely chopped fresh coriander leaves.

Step 16: Cut one burger bun horizontally in half.

Step 17: Place 1 large piece of fresh lettuce leaf and 3 slices of fresh tomatoes. Put the fried fish fillet and apply the mayo sauce on it.

Step 18: Put the other half of the burger on top of it. Repeat the steps from 7 to make all the burgers. Your tasty and spicy homemade fish burger is now ready to serve.

Notes

I recommend using top-quality fillets of fresh Bhetki fish. This enhances the taste and texture.
Before marinating, pat dry the fillets properly. This will ensure perfect adherence and infusion of flavor.
Keep the marinated fish fillets aside. I usually keep them for half an hour. This also enhances the flavor.
Use a little bit of water to make the egg mixture. This will render a crisp and golden crust.
Always fry the fish fillets in batches when the oil is adequately hot. This will prevent absorption of oil.
