Egg bhurji masala comprises humble scrambled eggs, but in larger pieces unlike a standard egg bhurji, cooked in a rich and creamy gravy. The eggs are fried with a little bit of salt, turmeric and red chili powder. The base of the gravy is made by blending tomatoes and cashew nuts with ginger, garlic and green chilies. The Ingredients:

To make the egg bhurji mixture:

  • 5 eggs

  • 30 grams butter

To cook the egg bhurji masala:

  • 1 tbsp cooking oil
  • 2 pieces green cardamom (whole pods)
  • 4 pieces cloves
  • 1 piece bay leaf
  • ½ tsp cumin seeds
  • 2 pieces onions (medium size, finely chopped)
  • Salt to taste
  • ½ tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • ½ tsp cumin powder (roasted)
  • ½ cup water
  • ½ tsp dry fenugreek leaves (Kasuri Methi, crushed)
  • ¼ tsp black pepper powder
  • ½ tsp garam masala powder
  • 3 tsp malai (or fresh cream)
  • 1 glass water
  • Coriander leaves (a few, finely chopped)

The first time I came across this recipe was on a rainy afternoon when I went to my aunt’s place. She decided to write down the entire recipe for me in my kitchen diary after witnessing my happiness while I watched each step closely.

I attempted the recipe on the following weekend for our family brunch which filled our home with pleasant aromas. The dish achieved perfect results because the texture matched our expectations and the taste components worked together perfectly. My husband expressed his complete satisfaction by saying that the dish tasted just like restaurant food. My sons consumed the dish with great enthusiasm and their plates were clean in minutes.

How to Make Egg Bhurji Masala? (Step by Step Guide with Images)

Step 1: Mix ¼ tsp of salt, ¼ tsp of turmeric powder, and ¼ tsp of red chili powder with 5 eggs.

Step 2: Make a paste with 2 pieces of tomatoes (medium size, finely chopped), 8 pieces of garlic cloves (peeled, whole), 1 piece of ginger (2 inches in size, peeled, and cut in small pieces), 3 pieces of cashew nuts and 3 pieces of green chilies.

Step 3: Fry 2 pieces of green cardamom (whole pods), 4 pieces of cloves, 1 piece of bay leaf, and ½ tsp of cumin seeds in 1 tbsp of cooking oil. Also fry 2 pieces of onions (medium size, finely chopped).

Step 4: Mix the tomato paste and salt to taste.

Step 5: Add ½ tsp of red chili powder, 1 tsp of coriander powder, ½ tsp of turmeric powder, and ½ tsp of cumin powder (roasted). Add ½ cup of water.

Ingredients

Notes

I have used 5 eggs for the recipe. You can take more if you need.
You can add black pepper powder, roasted cumin seed powder, and chili flakes to the egg mix as well.
You may fry only cumin seeds to start the cooking process but adding cloves and green cardamom adds to the flavor and taste of the dish.
Stir malai continuously after adding to prevent it from sticking and burning.
Replace butter with two tablespoons of ghee (clarified butter) or cooking oil if you want.
