Mix ¼ tsp of salt, ¼ tsp of turmeric powder, and ¼ tsp of red chili powder with 5 eggs.
Make a paste with 2 pieces of tomatoes (medium size, finely chopped), 8 pieces of garlic cloves (peeled, whole), 1 piece of ginger (2 inches in size, peeled, cut in small pieces), 3 pieces of cashew nuts and 3 pieces of green chilies.
Fry 2 pieces of green cardamom (whole pods), 4 pieces of cloves, 1 piece of bay leaf, and ½ tsp of cumin seeds in 1 tbsp of cooking oil. Also fry 2 pieces of onions (medium size, finely chopped).
Mix the tomato paste and salt to taste.
Add ½ tsp of red chili powder, 1 tsp of coriander powder, ½ tsp of turmeric powder, and ½ tsp of cumin powder (roasted). Add ½ cup of water.
Mix ½ tsp of dry fenugreek leaves (Kasuri Methi, crushed), ¼ tsp of black pepper powder, ½ tsp of garam masala powder, 3 tsp of fresh cream or malai, and a glass of water.
Melt 30 grams of butter and pour the egg mixture.
Cut it in pieces.
Add and mix the fried egg pieces with the masala gravy.
Add and mix a few finely chopped coriander leaves.
Your tasty and spicy homemade egg bhurji masala is ready.
