Anda vada is made with finely chopped boiled eggs mixed with finely chopped capsicum, onions, ginger, and garlic along with spices and herbs. Corn flour and breadcrumbs are used for binding as well. The mixture is then shaped into small tikkis, which are fried to perfection until crispy and golden-brown.

Instructions
Mix 3 pieces of finely chopped eggs, ½ cup of capsicum and ¼ cup of onions, both finely chopped, ½ tsp of grated ginger and garlic, 2 pieces of finely chopped green chilies, 1 tbsp of coriander leaves (finely chopped), salt to taste, 1 tsp of cumin and red chili powder mixture (roasted and ground) and 2 tbsp of corn flour with 1 tbsp of water.
Mix 2 tbsp of bread crumbs nicely and shape the tikkis. Put them in oil to fry.
Make small pieces of eggs. It gives the right texture to the anda vadas.The dish receives its taste enhancement from roasted cumin and chilies.Always deep fry anda vadas over a medium flame for perfect crunch and golden color.
