I always select firm and fresh bitter gourds for the pickle. Soft or overripe ones adversely affect the texture of the pickle.Make sure you cut the bitter gourds into uniform slices. This not only enhances the visual appeal but also helps in the uniform absorption of spices.I roast the fenugreek and mustard seeds before grinding them into powder. It enhances their flavor and contributes to the overall taste of the pickle.You can use any brand of neutral cooking oil to mix with the bitter gourd.Make sure you use enough oil to cover all the ingredients properly. This will result in better preservation.
