Step 1: Take a mixing bowl and add 1½ cups of bitter gourd, 8 to 10 slitted green chilies, 8 garlic cloves, and 2 cups of oil. Mix them well.

Step 2: Now add ½ tsp turmeric powder, 1.5 tsp salt, and 2.5 tsp red chili powder. Mix it very well.

Step 3: Take a frying pan and heat it. Add 1/4th tsp of fenugreek seeds and sauté until you get a nice aroma. Now, turn off the flame.

Step 4: Add 1 tsp of mustard seeds and sauté. Allow it to cool down for some time.

Step 5: Take those seeds and grind them into a fine powder.

Step 6: Now, simply mix the spice blend with the bitter gourds.

Step 7: Add 2 tsp of sugar to the spice mix.

Step 8: Pour 1/3rd cup of lemon juice into it.
