Heat a pan and add 2 tbsp of cooking oil in it. Add 1 tsp of ginger garlic paste. Fry it for about 30 seconds on a medium flame to remove the raw smell.
Then add one medium-sized, finely chopped onion and sauté it until it turns translucent.
Now, add one medium-sized, finely chopped capsicum and fry it for about another 60 seconds.
When done, add 1 tsp of salt, ½ tsp of black pepper powder, ½ tsp oregano and ½ tsp of chili flakes. Mix them all nicely and fry for another 3 seconds.
Now, add ½ tsp of soy sauce and 2 tbsp of pizza sauce to it and mix everything very nicely.
Then add 500 gm of shredded chicken that you had boiled with a little bit of salt earlier. Mix the shredded chicken very nicely with all the ingredients and cook for another 2 to 3 minutes. (Pro tip: You can also use raw minced chicken instead of boiled and shredded chicken. In that case, it will take about 8 to 10 minutes to cook).
Now, turn the flame of your gas stove to low and add 1 tbsp of tomato ketchup and 1 tbsp of mayonnaise to it. (Pro tip: If you do not have mayonnaise at home or do not prefer it, you can use grated cheese or fresh cream).
At this stage, add 2 tbsp of finely chopped fresh coriander leaves to it. Give it a final mix very gently, turn the gas stove off, and let the stuffing cool down completely.
By the time the stuffing cools down, make the slurry. Take a bowl, put 4 tbsp of refined wheat flour (maida) in it. Add ¼ tsp of salt and ¼ tsp of black pepper powder to it. Mix these dry ingredients nicely.
Add a little bit of water to it after mixing and continue adding water gradually to make a thick mixture. Remove 3 to 4 tsp of slurry in a separate bowl and keep it aside. It will be used as glue to stick the sides of the breads after stuffing.
Now, continue adding water to the rest of the mixture. Make a diluted slurry. Keep it aside.
Now, take 10 bread slices, two at a time. Trim the sides of one bread slice to get a square piece as shown.
Place this square on the other slice of bread are cut the sides to make identical pairs. Keep the pair aside. Repeat the process to complete as many pairs as you want to make.
Now, put a generous amount of the thick slurry (glue) on one side of an ice cream stick. Place it on one corner of a square bread piece as shown with the side of the ice cream stick with the glue facing down. Repeat the process for 4 or 5 bread pieces.
Put the chicken and capsicum stuffing on top of it. Spread it evenly over the piece of bread. (Pro tip: Do not put too much of stuffing in one lollypop. About a tablespoon of it is just right or else it will be very fat and difficult to fry).
Put a piece of cheese slice on it.
Now, take another square slice of bread and put the slurry-glue on all its four sides.
Place the bread piece on top of the cheese slice and press it gently so that both the bread pieces stick together. Repeat the process to complete all the pairs. Keep them aside so that the glue dries up and everything sets properly.
Now, take an adequate amount of bread crumbs on a plate.
Dip a lollypop in the slurry first and then in the bread crumbs. (Pro tip: It is crucial to check that the lollypops are sealed and coated from all sides precisely or else the cheese will melt down quickly and ooze out from within).
Make sure that it is coated and sealed from all sides. Repeat the process for all and keep them all aside to set properly.
Heat an adequate amount of cooking oil on high heat in a pan. When it is hot, turn the flame to medium and gently place the bread pizza popsicles in the oil. (Pro tip: Do not overcrowd the pan with too many popsicles at a time. Frying two at a time is just right. It will allow proper frying and easy flipping).
Sprinkle hot oil on each popsicle to ensure everything inside is cooked nicely. Cook it for about 2 to 3 minutes only.
Flip the lollypops when one side is done and turns to golden brown in color. (Pro tip: Flip the lollypops very gently and carefully so that they do not break or hot oil does not splash on you).
Remove them one by one when both sides are cooked evenly on a piece of tissue paper to absorb the excess oil. Repeat the process to cook all the lollypops.
Finally, your delicious and spicy homemade bread pizza lollypops are ready to serve. Arrange them on a plate and serve with a bowl of classic tomato ketchup alongside and enjoy!
