Bread pizza lollypops are made with a pair of slices of bread stuffed with boiled chicken, capsicum, and onion along with a variety of spices, essentially pizza sauce. Coated with slurry and bread crumbs, these lollypops are then fried to perfection. The steps to make bread pizza lollypops at home are quite easy as you will learn from my recipe.

The Ingredients:

To make 5 bread pizza lollypops:

  • 10 pieces bread (two each for 5 lollypops)

To make the stuffing:

  • 2 tbsp pizza sauce
  • 2 tbsp cooking oil
  • 1 tsp ginger garlic paste
  • 1 piece onion (medium size, finely chopped)
  • 1 piece capsicum (medium size, finely chopped)
  • 1 tsp salt
  • ½ tsp black pepper powder
  • ½ tsp oregano
  • ½ tsp chili flakes
  • ½ tsp soy sauce
  • 500 gram chicken (boiled with little salt, shredded)
  • 1 tbsp tomato ketchup
  • 1 tbsp mayonnaise
  • 2 tbsp coriander leaves (finely chopped)
  • 5 slices cheese

To make the slurry:

  • 4 tbsp refined wheat flour (maida)
  • ¼ tsp salt
  • ¼ tsp black pepper powder
  • Water – As required

To coat the lollypops:

  • Bread crumbs – As required

While working at religious event, one of the volunteers brought these lollypops from home and offered a bite to every one of us. Since I was starving, I could not resist the offer. Thank God I didn’t. The taste of the lollypops was just perfect. More than the volume, it is the taste of these lollypops that lingered in me for a long time.

I asked for the recipe and she was quite happy to share it with me. I tried to make these lollypops at home that weekend and they all turned out to be as crispy and tasty as they could be. It is now my “community care” dish. I make it when I want to feel connected to causes bigger than myself.

How to Make Bread Pizza Lollypop? (Step by Step Guide with Images)

Step 1: Heat a pan and add 2 tbsp of cooking oil in it. Add 1 tsp of ginger garlic paste. Fry it for about 30 seconds on a medium flame to remove the raw smell.

Step 2: Then add one medium-sized, finely chopped onion and sauté it until it turns translucent.

Step 3: Now, add one medium-sized, finely chopped capsicum and fry it for about another 60 seconds.

Step 4: When done, add 1 tsp of salt, ½ tsp of black pepper powder, ½ tsp oregano and ½ tsp of chili flakes. Mix them all nicely and fry for another 3 seconds.

Step 5: Now, add ½ tsp of soy sauce and 2 tbsp of pizza sauce to it and mix everything very nicely.

Step 6: Then add 500 gm of shredded chicken that you had boiled with a little bit of salt earlier. Mix the shredded chicken very nicely with all the ingredients and cook for another 2 to 3 minutes.

(Pro tip: You can also use raw minced chicken instead of boiled and shredded chicken. In that case, it will take about 8 to 10 minutes to cook).

Step 7: Now, turn the flame of your gas stove to low and add 1 tbsp of tomato ketchup and 1 tbsp of mayonnaise to it.

(Pro tip: If you do not have mayonnaise at home or do not prefer it, you can use grated cheese or fresh cream).

Step 8: At this stage, add 2 tbsp of finely chopped fresh coriander leaves to it. Give it a final mix very gently, turn the gas stove off, and let the stuffing cool down completely.

Step 9: By the time the stuffing cools down, make the slurry. Take a bowl, put 4 tbsp of refined wheat flour (maida) in it. Add ¼ tsp of salt and ¼ tsp of black pepper powder to it. Mix these dry ingredients nicely.

Step 10: Add a little bit of water to it after mixing and continue adding water gradually to make a thick mixture. Remove 3 to 4 tsp of slurry in a separate bowl and keep it aside. It will be used as glue to stick the sides of the breads after stuffing.

Step 11: Now, continue adding water to the rest of the mixture. Make a diluted slurry. Keep it aside.

Step 12: Now, take 10 bread slices, two at a time. Trim the sides of one bread slice to get a square piece as shown.

Step 13: Place this square on the other slice of bread are cut the sides to make identical pairs. Keep the pair aside. Repeat the process to complete as many pairs as you want to make.

Step 14: Now, put a generous amount of the thick slurry (glue) on one side of an ice cream stick. Place it on one corner of a square bread piece as shown with the side of the ice cream stick with the glue facing down. Repeat the process for 4 or 5 bread pieces.

Step 15: Put the chicken and capsicum stuffing on top of it. Spread it evenly over the piece of bread.

(Pro tip: Do not put too much of stuffing in one lollypop. About a tablespoon of it is just right or else it will be very fat and difficult to fry).

Step 18: Place the bread piece on top of the cheese slice and press it gently so that both the bread pieces stick together. Repeat the process to complete all the pairs. Keep them aside so that the glue dries up and everything sets properly.

Step 20: Dip a lollypop in the slurry first and then in the bread crumbs.

(Pro tip: It is crucial to check that the lollypops are sealed and coated from all sides precisely or else the cheese will melt down quickly and ooze out from within).

Step 21: Make sure that it is coated and sealed from all sides. Repeat the process for all and keep them all aside to set properly.

Step 22: Heat an adequate amount of cooking oil on high heat in a pan. When it is hot, turn the flame to medium and gently place the bread pizza popsicles in the oil.

Notes

I have used regular white bread to make the bread pizza lollypops. You can use brown bread if you prefer.
Pizza sauce is mandatory for this recipe. Do not skip it.
I have added a tablespoon of both tomato ketchup and of mayonnaise because tomato ketchup acts as a good binding agent and the mayonnaise adds to the rich and creamy taste of the bread pizza lollypops. 
Do not throw away the trimmed edges of the bread slices. Dry roast them a bit and grind roughly in your grinder to make bread crumbs of them and use it in this recipe or store it for later use.
Though it is not mandatory, you may refrigerate the coated bread pizza lollypops for 15 to 20 minutes. This will ensure perfect setting and easy frying.
