Chicken tandoori wings are made with fresh chicken wings coated with a special spice and yogurt-based marinade. The marinade consists of red chili powder, tandoori masala, garam masala, ginger-garlic paste and soy sauce as its components to create a strong and spicy flavor profile. The wings undergo marination to improve their taste before shallow frying them in mustard oil until they become soft and applying hot charcoal to create a traditional smoky flavor.
Make a paste with ½ tsp of red chili powder, 1 tbsp of tandoori masala powder, ¼ tsp of garam masala powder, ½ tsp of garlic paste, ½ tsp of ginger paste, ½ tsp of cumin paste, and 2 tbsp of yogurt. Then add 1 tsp of soy sauce and salt to taste.
Mix it with 8 pieces of chicken wings. Cover and let it marinate for 2 hours.
Fry them in 2 tbsp mustard oil. Cover and cook for 5 minutes on a medium flame. Flip, cover, and again cook for 5 mins until totally boiled.
Smoke them for 5 minutes by pouring 1 tbsp of cooking oil on hot charcoal.
Garnish them with a few finely sliced onions and chopped spring onions. Your tasty and spicy homemade chicken tandoori wings are ready.
I use fresh chicken wings for the authentic taste.Longer marination of the chicken wings makes them juicier.I prefer using mustard oil as it gives a nice pungent taste to the chicken wings.You can put ghee instead of cooking oil for smoking the chicken wings.
