Chicken tandoori wings are made with fresh chicken wings coated with a special spice and yogurt-based marinade. The marinade consists of red chili powder, tandoori masala, garam masala, ginger-garlic paste and soy sauce as its components to create a strong and spicy flavor profile. The wings undergo marination to improve their taste before shallow frying them in mustard oil until they become soft and applying hot charcoal to create a traditional smoky flavor. Notes

I use fresh chicken wings for the authentic taste.
Longer marination of the chicken wings makes them juicier.
I prefer using mustard oil as it gives a nice pungent taste to the chicken wings.
You can put ghee instead of cooking oil for smoking the chicken wings.
