One day, I dropped by my cousin’s home for dinner. She served this crunchy sweet and sour sauce topped with boiled egg balls as a starter dish. The taste, flavor, and visual appeal of this dish entirely captivated me and I asked for the recipe. She very generously explained every step and I copied all of it onto a piece of paper to be able to exactly reproduce the same dish at home later on.

Next Sunday, I did it and it turned out really great. The sauce and the egg balls were made completely in the right balance of tanginess and spiciness. My husband complimented the flavor by calling it one of a kind and my two sons cheerfully devoured the first serving and asked for more. A moment such as this, witnessing them relish their meal, made me so happy. I was grateful to learn this delicious and simple recipe.

How to Make Egg Manchurian? (Step by Step Guide with Images)

Step 1: Boil, peel and cut 3 eggs into small pieces. Mix them with 3 tbsp of gram flour (besan), ¼ tsp of turmeric powder, ½ tsp of coriander seed powder, ½ tsp of cumin seed powder, ½ tsp of Kashmiri red chili powder, ½ tsp of garam masala powder, 1 tbsp of finely chopped garlic, 1 tsp of green chilies (finely chopped), one egg, and ½ tsp of salt.

Step 2: Make small balls. Put them in cooking oil on a medium flame.

Step 3: Flip them and remove them on a plate when done. Keep aside.

Step 4: Fry 1 tbsp garlic, one green chili, and one dried red chili, all finely chopped, in 2 tbsp of oil on a high flame. Then, add square cut pieces of 1 cup of onion and 1 cup of capsicum.

Step 5: Add 1 tbsp of red chili sauce, 1 tsp of dark soy sauce, 1 tbsp of green chili sauce, ½ tsp of salt, and ½ tsp of crushed black pepper. Then, add 1 tbsp of tomato sauce, 1 medium-sized tomato, deseeded and square cut, and 1 tbsp of finely chopped spring onions.

Notes

I use finely chopped garlic and chilies to make the egg balls for additional taste in every bite.
The dish reaches its best texture through perfectly fried golden egg balls.
I cook vegetables at a high flame because it maintains their natural color.
Overcooking vegetables will make them mushy as they will lose their crunchy texture.
You can add vinegar to your meal for a tangier flavor although I do not use it myself.
