Ingredients
  

  • 2 tbsp Coriander seeds
  • 1 tbsp Cumin seeds
  • 1 tbsp Fennel seeds
  • 1 tbsp White sesame
  • 1 tbsp Black pepper
  • 2 pieces Cloves
  • 1 piece Star anise
  • 4 pieces Cinnamon small sticks
  • 2 tbsp Desiccated coconut

Instructions
 

  • Take a frying pan and heat it on your gas stove. Now, put 2 tbsp coriander seeds, 1 tbsp cumin seeds, 1 tbsp fennel seeds, 1 tbsp white sesame, 20 black peppercorns, 2 cloves, 1 star anise, and 4 small cinnamon sticks to dry roast them.
  • Stir the spices until the color changes slightly.
  • Now, add 2 tbsp desiccated coconut to it.
  • Stir the content for about 2 minutes until the color of the coconut changes.
  • Turn the flame off and let the spice cool at room temperature.
  • When it is cool enough, transfer the spice into your mixer grinder.
  • Now add 1 tsp amchur or dried mango powder.
  • Then add 1 tsp black salt.
  • Now add, 1 tsp table salt.
  • Add 2 tbsp of Kashmiri red chili powder to it as well.
  • Finally, add 2 tsp sugar.
  • Now, grind the ingredients nicely. Your dabeli masala powder is ready.

Notes

  1. I always use fresh whole spices to make dabeli masala powder and suggest you to do the same. This enhances the taste of the masala powder dramatically.
  2. Roast the whole spices carefully. Keep the flame low and stir the spices continuously to prevent them from burning. Remove them from the fry pan when you notice an even color change.
  3. Cool the roasted spices completely before grinding. Grinding hot spices will result in a change in taste and flavor due to the heat.
  4. My recipe is customizable and therefore you can experiment by adding different spices to the mixture. You can even adjust the quantities according to your tolerance.
  5. Grind the spices to perfection to achieve a fine and consistent texture. This will help the flavor distribute evenly, thereby enhancing your taste experience.
