Dates Pickle | Khajur ka Achar

Ingredients
  

  • 500 gram dates
  • 1 tbsp fennel seed powder
  • 1 cup sugar
  • tbsp Kashmiri red chili powder
  • 2 tbsp mango powder
  • ½ tbsp black pepper power
  • ½ tbsp garam masala powder
  • ½ tbsp rock salt powder
  • Water as required

Instructions
 

  • Heat a frying pan and add 1 cup of sugar. (Pro tip: You can adjust the amount of sugar according to your preference.)
  • Add a little bit of water.
  • Incorporate the dates into the sugar and stir.
  • Add ½ tbsp black pepper powder, ½ tbsp garam masala powder, and ½ tbsp rock salt powder & mix well.
  • Stir in 1 tbsp mango powder.
  • Add 1½ tbsp Kashmiri red chili powder and mix thoroughly.
  • Add a little water and cook, ensuring an even mixture.
  • Add ½ cup more water and cook for some time.
  • Add 1 tbsp crushed fennel seeds and mix.
  • Your Dates Pickle is now ready to be served.

Notes

I choose fresh and high-quality dates for the pickle. This helps in enhancing the taste and flavor of the pickle.
Adjust the amount of sugar according to the sweetness of the dates. I recommend tasting it while you are making the pickle.
I add mango powder to my pickle as it gives a nice tangy taste to it.
Roast the fennel seeds lightly before crushing them and adding them to the pickle in the end. This will enhance the taste further.
Add water to the pickle gradually. Pay attention to the consistency to achieve the desired thickness.
