The Ingredients:

I got this pickle recipe from a crafts vendor at a local mela. She was selling hand-painted pots, and while I browsed, I asked what she eats during such long workdays. She opened her tiffin and even offered me a bite. The food was delicious, and it felt tastier with the pickle alongside.

When I asked, she gladly shared the recipe. I tried it the next day. My husband said it was earthy and artistic, and the boys loved the creativity. Now, it is our fair-day meal. That experience reminded me that creativity is not only limited to paint and pots, but it simmers on stoves too, blending simplicity with a personal flair.

Notes

I choose fresh and high-quality dates for the pickle. This helps in enhancing the taste and flavor of the pickle.
Adjust the amount of sugar according to the sweetness of the dates. I recommend tasting it while you are making the pickle.
I add mango powder to my pickle as it gives a nice tangy taste to it.
Roast the fennel seeds lightly before crushing them and adding them to the pickle in the end. This will enhance the taste further.
Add water to the pickle gradually. Pay attention to the consistency to achieve the desired thickness.
