Fry 1 tbsp of black pepper and 1 tbsp of cumin seeds, both crushed, in 2 tbsp of cooking oil for half a minute on a medium flame. Then add 3 pieces of onions (medium size, finely chopped). Fry until golden.
Add 1 tbsp of ginger garlic paste, 3 pieces of green chilies (cut into small pieces) and 1 tbsp of finely chopped coriander leaves.
Mix 2 pieces of tomatoes (medium size, roughly chopped) and 1 tsp of salt. Cover and cook for 7 to 8 minutes on a medium flame.
When it releases oil, add ¼ tsp of turmeric powder, 1 tbsp of coriander seeds powder, 1 tsp of red chili powder, 1 tsp of garam masala powder, and a bit of water.
Add ¾ cup of water. Bring it to a boil on a high flame.
Crack 5 pieces of eggs in a bowl one by one and add them to the gravy. Sprinkle a pinch of salt and black pepper powder on top of each egg. Cover and cook on a low flame until the eggs solidify.
Flip the eggs, cover and cook for 2 to 3 minutes more. Garnish with some finely chopped coriander leaves.
Check consistency of the gravy. Transfer it to a plate to serve.
