Ingredients

  • 3 pieces eggs
  • 3 pieces onions medium size, finely chopped
  • 1 piece tomato medium size, finely chopped
  • 1 tbsp coriander leaves finely chopped
  • ¼ tsp turmeric powder
  • ¼ tsp Kashmiri red chili powder
  • Salt To taste
  • 2 tbsp cooking oil

Instructions

  • Take a bowl and put 3 pieces of eggs in it. To it, first add ¼ tsp of turmeric powder, ¼ tsp of Kashmiri red chili powder, and regular table salt to taste, and mix them all nicely.
  • Now add 4 pieces of fresh green chilies (medium size, finely chopped) to it. Follow it with 1 piece of tomato (medium size, finely chopped), 1 tbsp of finely chopped fresh coriander leaves, and 3 pieces of onions (medium size, finely chopped). Mix them all nicely. Keep it aside.
  • Take a frying pan, put 2 tbsp of cooking oil, and when it is smoking hot, put the egg mixture in it.
  • Cover it. Let it cook for about 2 minutes. Flip it after two minutes, and let it cook for another minute or so.
  • Take it out and transfer it to a plate. Serve it hot.

Notes

Beat the eggs nicely to make them light and fluffy. This will add air and make the omelette soft.
Heat the pan properly before pouring the mixture. Keep the flame to medium. This will prevent it from sticking and burning.
I always use fresh eggs to make omellette at home. This adds to the softness and taste of the omelette.
Cut the vegetables into tiny pieces so that they mix nicely with the eggs and cook fast. It will add both crunch and taste to the omelette.
I prefer covering the pan with a lid while cooking. This keeps the steam inside and helps in cooking perfectly.
