I usually made omelette with onions and green chilies. The standard ones to be specific. I never thought adding coriander leaves and tomatoes in it will make it even tastier until I had it at my neighbor’s house during a dinner invitation.

Since then, I have been using these ingredients every time I make omelette at home. My kids and husband love it. I feel so pleased with myself and thank my neighbor every time, right from the bottom of my heart for sharing the recipe.

Notes

Beat the eggs nicely to make them light and fluffy. This will add air and make the omelette soft.
Heat the pan properly before pouring the mixture. Keep the flame to medium. This will prevent it from sticking and burning.
I always use fresh eggs to make omellette at home. This adds to the softness and taste of the omelette.
Cut the vegetables into tiny pieces so that they mix nicely with the eggs and cook fast. It will add both crunch and taste to the omelette.
I prefer covering the pan with a lid while cooking. This keeps the steam inside and helps in cooking perfectly.
