I had this snack item for the first time at a tiny railway retiring room in Madurai. I hadn’t eaten all day, and this meal was both an offering and a lifeline. It was a simple dish with not additional ingredients or garnishing but was extremely expressive with coatings I did not imagine.

I asked about the recipe but was answered there is nothing special to it. Listen to your guts and add the ingredients while cooking slowly. I never forgot that. When I made it at home, I did exactly that. It is what I prepare now on solo evenings, when I want my food to talk back.

How to Make French Toast? (Step by Step Guide with Images)

Step 1: Take 4 slices of sandwich bread and cut their edges. You may keep them if you want. However, I prefer it with the edges of the bread removed. I feel it looks and tastes better.

(Pro tip: Do not throw away the edges of the bread slices. Dry toast them in a tawa or oven and grind them coarsely in a mixer grinder to make bread crumbs and store them to use when you make chops and cutlets).

Step 2: Now, take a bowl or a cup, put 2 eggs, 2 tsp of sugar powder, 2 tbsp of milk, ¼ tsp of cinnamon powder, and whisk them nicely.

(Pro tip: Ensure that the milk is at normal room temperature. You can add vanilla essence of vanilla extract in place of cinnamon powder. These ingredients help in removing the raw smell of the eggs. You may also add salt to taste, though I did not).

Step 3: Now, take a rectangular bowl, put a slice of bread, pour some egg mixture, use a spatula to press, and ensure that the egg mixture is soaked evenly on all sides.

Step 4: Put another bread on top of it. Repeat the process. Fry it immediately.

(Pro tip: I prefer French toast with double bread slices. You may use only one if you want. In that case, you can skip this step and dip the bread slices individually to soak them with the egg mixture, provided the bowl is large enough to allow dipping a bread slice without breaking it).

Step 5: Take a frying pan, put 1 tsp of butter in it, and grease the entire surface of the pan with the butter using a brush.

Step 6: Place the bread slices soaked with egg mixture on it gently. Pree it a bit with the spatula. Let it cook for about 2 to 3 minutes on a low to medium flame.

(Pro tip: Do not cook the bread on a high flame. It will cook the outside quickly and start burning by the time the inside gets cooked. Do not rush).

Step 7: Press and flip them with a spatula in between to ensure it is cooked perfectly on all sides. Use a pair of spatulas to hold it while cooking the edges.

Step 8: When it is cooked nicely, put 1 tsp of maple syrup on one side of the French toast and spread it nicely on the surface. Flip it, apply another teaspoon of maple syrup on the other side, and spread it evenly. Cook it for another 10 to 15 seconds on both sides.

(Pro tip: If you do not have maple syrup at home, you can use an equal amount of honey as an alternative. If you do not have that too, you can skip this step. However, if you add any one of them, it will enhance the taste and flavor of the French toast).

Step 9: Take it out when done. Lay it on a plate, and sprinkle a bit of sugar powder.

Notes

I prefer using slightly old bread slices. It works best for French toast because it soaks up the egg mixture without getting too soft.
Always use fresh eggs to make your French toast. It will make them taste better and richer.
Check the temperature of the milk you use to make French toast. It should not be too cold. It must mix well with the eggs and cook evenly.
I recommend dipping the bread slices twice in the egg and milk mixture. It will enhance the taste without making it too heavy.
Use butter instead of oil for additional flavor and crispy touch to the outside. Cook it slowly on a low to medium flame to prevent burning.
