Puran poli is typically made with two main components, puran and poli. The Ingredients:

For making the dough:

  • 1 cup wheat flour (atta)

  • 2 tbsp cooking oil
  • Water – as required

For making the puran (stuffing):

  • 1 cup chana dal

  • 1 tsp cooking oil (to boil the chana dal)
  • ¾ cup jaggery (grated)
  • 1 tbsp cooking oil (to fry the dal mixture, optional)
  • ½ tsp cardamom powder
  • ½ tsp nutmeg powder (optional)

For frying the puran poli:

  • Ghee (clarified butter) – as required

My aunt is known for cooking and promoting old and traditional recipes. I learned this particular recipe from her a couple of years back during a visit for dinner. I asked for the recipe and she explained every step of it along with some pro tips to achieve the right consistency of the puran very patiently. I recorded everything very carefully on my phone.

On the following Sunday, I made it at home. I was surprised at how every piece of it turned out to be soft and perfectly cooked. My husband and two sons enjoyed every bit of it and asked for more, praising my effort all throughout. This made me happy and I thanked my aunt for being kind enough to share the recipe with me.

How to Make Puran Poli? (Step by Step Guide with Images)

Step 1: Take a cup of chana dal in a pressure cooker and pour 3 cups of water and 1 tsp of cooking oil and boil.

Step 2: Check the doneness of the chana dal. Strain the dal.

Step 3: Add ¾ cup of grated jaggery and mix nicely with a ladle.

Step 4: Now, press the mixture with the ladle so that the mixture comes out of the sieve on the other side. Scrape it with the ladle to collect it on a plate.

Step 5: Fry the dal mixture for about 4 to 5 minutes. Check the softness and dryness.

Step 6: Transfer the mixture to a plate first and then add ½ tsp of cardamom powder and ½ tsp of nutmeg powder. Mix and keep aside to cool down.

Step 7: Take 1 cup each of wheat flour (atta) and refined wheat flour (maida), ¼ tsp of turmeric powder (for color, optional), and ½ tsp of salt on a thali. Mix them well and then add 2 tbsp of cooking oil to it. Mix again.

Step 8: Now, add water gradually as required to make a soft dough. Grease some cooking oil on the surface, cover the dough with cloth and let it rest for about 10 minutes.

Step 9: Now, make medium-sized balls from the dough and stuffing.

Step 10: Now, use your palm to shape a dough ball like a bowl. Place a puran and close it.

Step 11: Rub a little bit of dry flour on the dough ball, flatten it and then roll gently.

Step 12: Now, put it on a preheated tawa.

Step 13: Flip it and when it swells up, rub some ghee on its surface. Flip it and apply ghee on the other side as well. Remove it when done.

Step 14: Your tasty homemade puran poli is now ready to enjoy. Serve it hot with ghee, aamti curry, and shikhand.

Notes

I have used unpolished chana dal in the recipe. You can use any type of chana dal you prefer.
The ratio of chana dal and water should be 1:3.
You may soak the chana dal overnight if you want but I prefer it without soaking as it renders the authentic taste of puran poli.
If you are also making the aamti (spicy curry) along with it, use the strained water of chana dal. This will render a better taste and flavor.
I have used only jaggery to make the puran but you can use a mixture of jaggery and sugar also if you want.
