Puran Poli

Puran poli is typically made with two main components, puran and poli. The puran is a sweet stuffing made with boiled and mashed chanadal mixed with jaggery, while poli refers to the flatbread made with a dough of atta and maida. These components are prepared individually first and then combined and rolled to make the poli, cooked to perfection with ghee to make it soft.

Ingredients
  

For making the dough:

  • 1 cup wheat flour atta
  • 1 cup refined wheat flour maida
  • ¼ tsp turmeric powder for color, optional
  • ½ tsp salt
  • 2 tbsp cooking oil
  • Water - as required

For making the puran (stuffing):

  • 1 cup chana dal
  • 3 cups water
  • 1 tsp cooking oil to boil the chana dal
  • ¾ cup jaggery grated
  • 1 tbsp cooking oil to fry the dal mixture, optional
  • ½ tsp cardamom powder
  • ½ tsp nutmeg powder optional

For frying the puran poli:

  • Ghee clarified butter – as required

Instructions
 

  • Take a cup of chana dal in a pressure cooker and pour 3 cups of water and 1 tsp of cooking oil and boil.
  • Check the doneness of the chana dal. Strain the dal.
  • Add ¾ cup of grated jaggery and mix nicely with a ladle.
  • Now, press the mixture with the ladle so that the mixture comes out of the sieve on the other side. Scrape it with the ladle to collect it on a plate.
  • Fry the dal mixture for about 4 to 5 minutes. Check the softness and dryness.
  • Transfer the mixture to a plate first and then add ½ tsp of cardamom powder and ½ tsp of nutmeg powder. Mix and keep aside to cool down.
  • Take 1 cup each of wheat flour (atta) and refined wheat flour (maida), ¼ tsp of turmeric powder (for color, optional), and ½ tsp of salt on a thali. Mix them well and then add 2 tbsp of cooking oil to it. Mix again.
  • Now, add water gradually as required to make a soft dough. Grease some cooking oil on the surface, cover the dough with cloth and let it rest for about 10 minutes.
  • Now, make medium-sized balls from the dough and stuffing.
  • Now, use your palm to shape a dough ball like a bowl. Place a puran and close it.
  • Rub a little bit of dry flour on the dough ball, flatten it and then roll gently.
  • Now, put it on a preheated tawa.
  • Flip it and when it swells up, rub some ghee on its surface. Flip it and apply ghee on the other side as well. Remove it when done.
  • Your tasty homemade puran poli is now ready to enjoy. Serve it hot with ghee, aamti curry, and shikhand.

Notes

I have used unpolished chana dal in the recipe. You can use any type of chana dal you prefer.
The ratio of chana dal and water should be 1:3.
You may soak the chana dal overnight if you want but I prefer it without soaking as it renders the authentic taste of puran poli.
If you are also making the aamti (spicy curry) along with it, use the strained water of chana dal. This will render a better taste and flavor.
I have used only jaggery to make the puran but you can use a mixture of jaggery and sugar also if you want.
