Long time back I visited a fair at a village in Murshidabad. There I saw a village woman behind a large tawa on a makeshift chulha. She was making something. I was curious and moved towards her. I saw she was making sandwiches.

I said to myself, what a big deal! Big deal it really was because she was making these sandwiches with poached egg and minimal ingredients. I watched her and the process noting it down in my brain. Back home, I made it for my kids who loved it immensely. Now they often want the same for breakfast.

How to Make Poached Egg Sandwich? (Step by Step Guide with Images)

Step 1: Take a tawa. Heat it. Put ½ tsp of oil. Spread it. Make one egg poach.

Step 2: Put a pinch of salt and black pepper. Fry it for about a minute.

Step 3: Flip it to fry it on both sides. Transfer it to a plate and keep it aside.

(Pro tip: I like it fried on both sides. However, you may skip it if you want).

Step 4: Take 2 slices of sandwich bread. Apply about 1 tsp mayonnaise on each slice.

Step 5: Now, take a plate and cut a few slices of onion, fresh cucumber, and tomato. Make circular pieces of all.

Step 6: Put four tomato slices on one slice of bread. Then put the poached egg over them.

Step 7: Arrange the cucumber slices next.

Step 8: Put a few slices of onion. Sprinkle a pinch of salt and black pepper powder on it.

Notes

I prefer using fresh bread to make poached egg sandwich at home. This renders better taste and texture.
Cut the bread diagonally. This will add to the look and will be easy to eat.
While flipping, be very careful. Turn the sandwich carefully to keep the fillings intact.
I prefer the sandwich to be golden brown. This ensures perfect cooking and gives the right crunch.
