Take a frying pan and heat it on a low to medium flame on your gas stove. When it is hot first put 20 pieces of dry red chilies on it. Stir them to roast them dry nicely and put them aside.
Next, put 2 tbsp of coriander seeds in the frying pan.
Stir them for a minute to roast them nicely.
Then add 2 tbsp of black peppers into it.
Stir them briskly for about a minute so that they do not get burnt while you roast them.
Now add ½ tsp of fenugreek seeds and continue stirring the ingredients.
Then add 1 tsp of both cumin seeds and mustard seeds to the roasted ingredients.
Stir them until you hear the crackling sound. Put them aside.
Now pour 2 tbsp of brown rice into the frying pan.
Stir them for a minute till the color changes to deep brown.
Now, put 1 tbsp of curry leaves into the pan.
Stir them continuously till they are absolutely dry.
Check that all the and are completely cool.
Now take a clean and dry grinder.
Pour all the ingredients into it.
Now add 1 tsp turmeric into the grinder.
Then add 1 tsp Kashmiri red chili powder.
Finally, add 1 tsp ginger powder to it.
Grind the ingredients nicely into a fine powder.
Check the powder. You may grind it a couple of times for a finer powder.
Your homemade fish masala powder is ready to use.
